Simple Skewers Summer Veggie Kaboom Kabobs
YIELD: 8 skewers

Ingredients for Kaboom Kabobs

  • 3 tbsp. melted butter
  • 1/4 c. mint leaves, finely chopped
  • 2 tsp. grated lemon peel
  • 1 lb. summer squash
  • 1 bunch green onions
  • 6 radishes, trimmed
  • 1 tsp. salt


  1. In small bowl, stir melted butter; fresh mint leaves; and grated lemon peel until combined.
  2. With vegetable peeler, peel summer squash into wide ribbons. Cut green onions into 2-inch lengths. Quarter radishes. Onto thick bamboo or flat metal skewers, thread squash ribbons, radish quarters, and green onions, alternating.
  3. Brush skewers with mint butter and sprinkle with salt. Grill on medium 6 to 8 minutes, turning over once halfway through.
